Citrus And Garlic Orzo
1 ½ cup orzo pasta
1 tablespoon olive oil
3 cups of low or no sodium chicken broth (if using no-sodium broth, you will have to add salt to your liking). You can also just use water instead of broth and about ½ to 1 teaspoons of salt
1 tablespoon of lime or lemon juice
5 cloves of garlic diced small and ½ teaspoon garlic powder
¼ teaspoon dried basil or a few sprigs fresh, chopped (I use Lime Basil, a somewhat rare variety that I grow in my herb garden)
Several shakes of black pepper
A few sprigs of fresh cilantro, parsley and chives, chopped or ½ teaspoon of each, dried
On medium heat, combine orzo and olive oil. Stir constantly to lightly toast. When at least 1/3rd of the orzo is toasted add all of the remaining ingredients. Stir, reduce heat to simmer (low), cover and cook until the liquid is almost all absorbed (stir every few minutes). When almost all liquid is absorbed (about 15-20 minutes), turn off stove and allow orzo to sit, covered, for another 10 minutes.
